Green Rice

This is one of my favorite recipes from Peru.

Ingredients

-2 cups of rice
- 1 cup of veggies: peas, diced carrots, corn ,etc (frozen are ok)
-2 cups of cilantro.
-1 lb of diced chicken
-4 cups of water

Cooking

1. Put the cilantro in a blender with half a cup of water and blend well.
2. Put the cilantro mix on a medium pot and add the chicken with salt and pepper to taste. Let it cook for 10 min in medium heat
3. If you have a rice cooker, put the ckicken, cilantro, rice, veggies and the rest of the water in the rice cooker. Mix well and add salt and spices to taste. The rice cooker will turn off when the rice is done.
4. If you don't have a rice cooker, too bad so sad :) JK. Do the same thing as in the previous step except when the water is boiling then turn down the heat to low and let it cook until the water is all evaporated.
5. Serve and enjoy!!

Lomo Saltado Recipe
This is to my wife Susie who loves this dish. Or to anyone who happens to love Lomo Saltado, peruvian style.

1 lb of Beef cut in cubes
2 lbs of potatos
2 cups of rice
1 small onion, chopped
2 tomatoes
1/2 cup of cilantro
1/2 cup of oil
2 cloves of garlic, chopped
Salt and pepper to taste



Cook the rice.
While the rice is cooking, peal the potatoes and fry them in the oil. The oil has to be around medium high temperature. If it is too high it could burn the fries.
On a different pan cook the meat with a little oil and season with salt, pepper and garlic. Cover and cook for 10 min. Add water if needed to. Add the onions and cook for 5 min or until onions are done. Add tomatoes and cook a few more minutes until tomatoes are done and add the fries at the end just to let them stem. Garnish with cilantro. Optionally, you can add soy sauce to make it more juicy or just plain water when cooking the meat and onions. Enjoy!!


Papa a la Huancaina (Potatos and yummy sauce)
6 Servings

Ingredients
- 6 big pealed potatoes (or 2 small ones per person)
- 6 eggs
- 5 jalapeno peppers cut in pieces
- half of medium onion cut in small pieces
- 2 cloves of garlic
- 1/2 lb of mozzarella cheese
- 1/2 cup of milk
- 1 teaspoon of peanut butter
- 4 saltine crackers
- salt to taste

Preparation
1. Boil the potatoes and eggs until they are well cooked.
2. On a large frying pan fry with a little bit of oil, the jalapenos without the seeds for a medium spicy taste and for a mild taste, get rid of the veins as well. Add also to the pan the onions and garlic and fry until all of them are well cooked.
3. On a blender put the onions,jalapenos and garlic from the frying pan. Also add the cheese, crackers, milk and peanut butter. Blend everything. The sauce shouldn't be too chunky. You might not need to but add salt to taste if needed.
4. Serve cutting the potatoes and eggs in slices and the sauce on top of the potatoes and eggs. Alternatively, you can also serve it with lettuce, sliced tomatoes and olives.
